Dairy & Sugar Free Vanilla Iced Coffee

I LOVE coffee.  LOVE it!  Before becoming gluten and dairy free I would always drink real dairy lattes, mochas, and I would always have half and half or another form of creamer in my coffee.  These days I drink my coffee black.  It’s taken me a while to get to this point.  Every now and then I’ll still crave a vanilla iced latte.  I’ve come up with an dairy and sugar free alternative and just thought I’d share.

Here’s what you’ll need:

a tall glass

ice

rice milk (or your favorite dairy free milk)

NuNaturals Vanilla Liquid Stevia (or coconut sugar, agave, honey, brown rice syrup, etc…)

freshly brewed coffee, cooled to room temperature (at least)

Fill the glass with ice (all the way to the top).  Add in a splash of rice milk (the amount really depends on preference), then 3 – 5 drops of vanilla stevia.  Fill the glass up with coffee, stir and enjoy.

    I had to come by and wish you a happy mother's day and send you a big hug! I hope you had a fabulous day! I love your recent coffee and Thai soup recipes. My two biggest weaknesses are without a doubt coffee and Thai food! When I saw your soup recipe I thought–get out!! I love Thai! Way to keep the recipes coming!

    I love reading your blog, Megan! We need to catch up soon. I spent quite a few years managing our family's coffee shop, and when I read your post I thought of a tip that may help perfect your iced coffee recipe. Many people aren't aware that you can chill coffee and it won't affect the taste. Simply make a pot, let it cool to room temperature in a pitcher, and cover it and stick it in the fridge. It will last at least a week, and when you use it in your iced coffee, it's already cold so the ice cubes won't water it down at all. It can also be used to make coffee shakes for a bit of variety (blending your iced coffee ingredients) without losing the strenth of the coffee taste. You can play around with your quantities of flavor and ice depending on preference. Hope that helps. 🙂
