    Hey Megan–Thanks so much for the highlight! Folks are very excited about those alternative pizza crusts. :-) Those other two choices look great, too!

[…] 1 cup almond meal 1/4 cup coconut flour 1/2 tsp. sea salt 1 cup unsweetened shredded coconut flakes 1 cup pumpkin seeds 1 cup sunflower seeds 1/2 cup chopped or slivered almonds 1/2 cup coconut oil, melted 2 tsp vanilla 40 drops or 1/2 tsp NOW brand organic liquid stevia 3 eggs Pre-heat oven to 350 degrees. Grease a 9 x 13 inch pyrex with a little coconut oil. Melt the 1/2 cup coconut oil on low heat. Meanwhile, mix all the dry ingredients in a large bowl very well.   Add coconut oil, vanilla, stevia and eggs. Mix VERY well again.Place in the pyrex and evenly coat the dish.     Bake in oven for about 25 minutes… till browned on the edges and lightly browned on top.     You may try it with berries too… dried or fresh or frozen… no more than 1/2 cup and you may need to cook longer.     Or for extra protein, add some whey protein powder! You may need to adjust the liquid but not by much.   We really love these bars!
