Garlic Lover's Roasted Cauliflower

This Garlic Lover's Roasted Cauliflower is one of my family's favorite recipes. We fight over the crunchy bits of garlic!

This Garlic Lover's Roasted Cauliflower is seriously my favorite way to eat and prepare cauliflower. When cauliflower is roasted in the oven, it gets nice and golden, and a little crispy! It's almost like a caramelization of sorts.

And then there's ALL THE GARLIC!

You might find your table mates trying to steal your pieces of garlic when you're not looking. The positive side of this? There will be NO vampires coming around your house. Like, at all. 😉

I've been known to eat this alone for a meal, but you can always serve it as a side dish.

Pair it with chicken, fish, steak, etc. You really can't go wrong.

Garlic Lover's Roasted Cauliflower

2 cauliflower heads
10 - 12 garlic cloves, peeled and smashed
5 tablespoons olive oil (or coconut oil)
¾ teaspoon sea salt
½ teaspoon dried oregano
½ teaspoon dried basil

  1. Preheat oven to 425 degrees (F).
  2. Chop the heads of cauliflower in to two inch florets (approximately).
  3. Toss the florets, garlic, olive oil, sea salt, oregano, and basil in a 9x16" glass baking dish (or a parchment lined cookie sheet).
  4. Bake for 1 hour, stirring every 15 minutes.

Whether you eat this as a side dish or a main meal is up to you, but just be warned, you may find yourself fighting for those roasted garlic cloves!

    After 15 minutes the cauliflower was already dark brown on the edges and overdone because I didn't stir them. I don't know how you were able to roast for an hour?

      You want to set your oven to bake. I have a very simple oven, so I forget there are other ovens out there with other settings. 🙂

    Wow! You got my entire family to eat cauliflower - that has never once happened in our entire 16 years as a family. All of the kids kept asking for more and the dish was emptied in minutes. Amazing!

    This is my go-to recipe for roasted cauliflower. The first time I made it, ALL 4 of the kids fought over who got to finish the pan - four kids, who up until that point, couldn't stand cauliflower. haha Thanks so much for a truly good and simple recipe!
