Dairy Free Peppermint Hot Cocoa

A baby moose was hanging out in my driveway this morning.  Momma wasn’t too far behind him, but this little guy was so cute – I just had to share his picture!

It is COLD outside!  The high temp at my house for today was 1 degree (F).  Supposedly the winds are supposed to pick up, and with the windchill, it’s supposed to be -15 to -30 (yes, that is a negative sign, so 15 to 30 degrees below zero).  BRR!!

Time to warm up with some cocoa!


We love hot cocoa in this house, but we especially love peppermint hot cocoa.  🙂  If you are not a peppermint fan, just simply leave the peppermint extract out and double up on the vanilla.

Peppermint Hot Cocoa 678 px

Dairy Free Peppermint Hot Cocoa

2 cups unsweetened almond milk
3 tablespoons cocoa (The higher quality the cocoa, the better tasting your hot chocolate will be!)
2-4 tablespoons coconut nectar, honey, palm sugar, etc. to taste
1/4 teaspoon vanilla extract
1/4 teaspoon peppermint extract

  1. Combine all ingredient in a saucepan over medium heat and stir occasionally until all the lumps from the cocoa are dissolved (do not allow your milk to boil!).
  2. Pour into two mugs and enjoy!
