The girls are still sleeping (YAY!!), so I thought I would try to sneak in a quick note. Thank you, again, to all my friends and family supporting me in this endeavor. I wouldn’t be able to do it without you. LOVE YOU ALL!
One of the biggest things I had an issue giving up when starting the anti-inflammation diet was my half and half in my coffee. Before the diet, I would wake up feeling like I had been beaten with a bat in the middle of the night or run over by a train if you will. Stiff joints, achy muscles, swollen hands/feet… coffee was (and still is!) my morning sanity. I’m sure many of you arthritis moms (or dads!) out there have a similar routine: wake up (if you’re well enough to even get out of bed… I had a few close calls, but I made it!), change diapers, get bottles, put the children in front of tv to watch cartoons, then COFFEE!!! Sitting with my favorite drink in my favorite chair is just one of my ways with coping with the morning arthritis blues.
I tried using coconut milk (straight out of the can) as my coffee creamer for a while. I’d use agave nectar as my sweetener. I tried using almond milk, rice milk, etc… Nothing did it for me. I was still searching for the perfect cup of dairy free coffee.
One day while in our local health food store I discovered a line of coffee creamers from Turtle Mountain. Their So Delicious creamers are made from coconut milk (with only a hint of coconut flavor). They come in original, hazelnut, and french vanilla flavors – and I LOVE THEM! They are soy and dairy free. The one bummer is that they do have some organic evaporated cane juice in them, but I figure if it’s the only source of cane sugar I get in my day, then oh well.
For all of my followers in the Anchorage area, the So Delicious coffee creamers can only be found at the Natural Pantry.
