This is THE mayo recipe of all recipes. The safflower oil has a really nice mild flavor that compliments the taste of the mayo – even more so than olive oil.
Mix the first 5 ingredients in a blender on the lowest speed (on my blender it was the “stir” setting) until well blended. While the blender is still running, slowly drizzle in the safflower oil through the blender cap window. You may need to stop the blender, scrape the sides, then mix again. Taste and add more salt and pepper (if you think it needs it). Store in an airtight container in the refrigerator.
