This is such a versatile recipe. Unsweetened shredded coconut or dried fruit can easily be substituted for the seeds or nuts. Feel free to change it up!
Gluten & Sugar Free Granola Bars
1 ½ cups gluten free rolled oats
2 cups brown rice crispies
¼ cup sunflower seeds
¼ cup pumpkin seeds
¼ cup pecans (or your favorite nut… my husband says I’m his favorite nut… Ha!)
pinch of sea salt
½ cup honey
1 tsp cinnamon
½ cup almond butter (you can add up to ¾ cup depending on your taste)
1 tsp gluten free vanilla
Lightly grease an 11 x 7 inch baking pan, or use a smaller pan if you want thicker bars.
Mix together oats, brown rice crispies, seeds, nuts, and salt in a large mixing bowl.
In a saucepan combine the honey and cinnamon. Stir occasionally until barely boiling.
Remove the saucepan from heat and mix in the almond butter and vanilla until well combined.
Pour saucepan contents over your dry ingredients and mix well.
Transfer the mixture to your baking pan and use a spatula to press the mixture into the pan.
Let the granola bars set up for at least 30 minutes before enjoying. Please note, these do not completely harden. They have more of a rice crispy treat consistency.
