I am a HUGE fan of sweets. HUGE. We also eat a lot of nuts in this house. Now, that’s probably because we are nuts, but I’ll let you all be the judge of that! 🙂
I’m definitely going to make this recipe the next time I have a party. What a great looking dish to have out on your counter! AND they taste AWESOME too!!!
3 cup almonds
2 cup pecans
2 TBSP raw sesame seeds
1/4 cup raw honey or agave nectar or coconut nectar
1/3 cup pineapple juice
1 tsp cinnamon
Preheat your oven to 350 degrees (F).
In a small saucepan, bring the pineapple juice, honey, and cinnamon to a boil. Simmer for 10 minutes.
In a large mixing bowl, combine nuts, sesame seeds, and liquid mixture (careful, it will be hot!).
Spread the nuts out evenly over a large greased cookie sheet (make sure it is greased!!!).
Roast in the oven for about 25 minutes, stirring about every 8 minutes. Really start to watch these the last few minutes of baking. They can burn very easily if you’re not careful. If you are questioning whether or not you might be burning the nuts, taste one (after it cools a little). If it is starting to taste burnt, then they are overdone. The nuts will still be “wet” when you pull them out of the oven. They will harden when they cool down.
Cool on the counter on a large sheet of parchment paper.
