My girl, Dana, told me how to make this (Thanks, Dana!). Since I can’t have corn chips, I eat it with my favorite Edward & Son rice crackers. It would also be yummy over some of my bison taco meat (that’s another recipe for another day of blogging!).
1 can black beans (rinsed)
1 diced mango
2 to 3 TBSP chopped cilantro
part of a minced sweet onion or red onion
1 TBSP lime juice
jalapeno or cayenne pepper to taste
sea salt to taste
