16 oz. of gluten free pasta
5 oz. of goat cheese (I like the Kirkland Goat Cheese best)
1/2 cup frozen peas
1 1/2 cup chicken breast, already cooked and chopped
sea salt
pepper
Cook the pasta according to package directions and strain. Pour hot pasta into a large bowl; crumble pieces of the goat cheese on top of the hot pasta. Stir until all of the cheese is melted. Fold in frozen peas (the hot pasta will thaw the peas) and chicken. Add salt and pepper to taste.
Enjoy!

Now all you need is some bacon crumbled in there and you're good!
This looks like a great weeknight meal for the kids (they eat dairy). After rushing around to school, dentist appointments and soccer practice I barely had time to make dinner last nigh!. I will try this on those busy evenings! Thanks for sharingl. FYI: All my posts lately seem to be revolving around sugar, but I hope your sugar free challenge is going well! I'll bet you feel fantastic.
Wow, Megan. This looks and sounds fantastic!! I can’t wait to try this!
Thanks, Ashley! Let me know how you like it!
Has anyone found gf pasta that is made without rice flour or does any one have a recipe for homemade pasta or noodles?
I personally do not, but the Gluten Free Girl has a recipe for GF pasta (I think) on her website. Good luck!
