Apple Walnut Salad with (my favorite) Vinaigrette

This vinaigrette is good on just about any salad.  ;)

For the Salad:
3 cups mixed greens
1 TBSP hemp seeds
1/2 a fuji apple, chopped
handful of chopped walnuts
red onion, thinly sliced, optional
1 to 2 TBSP 100% sheep milk feta, crumbled, optional

Toss salad and a few tablespoons (to taste) of the vinaigrette in a large bowl.  Serve immediately. 

For the Vinaigrette:
1/2 cup rice vinegar
2 tsp Dijon mustard
1 garlic clove
2 tsp dried minced onion
3/4 tsp agave nectar
2 TBSP dried parsley
1/4 cup olive oil

Combine all the ingredients, except for the olive oil, in a blender.  Blend until smooth.  While the blender is running on low speed, drizzle in the olive oil.  Store in an air tight container in the refrigerator.

    Sounds so good. I love Dijon mustard in dressing (can't handle garlic or onions, but I'm sure it's still good without those.) And sheep's milk feta is my new favorite food. Is it just me or does it taste exactly like cow's milk feta?
