So who doesn’t like a good meatball?! They really are convenient little bite sized morsels. Maybe too convenient. It’s so easy to eat too many of them. Let me rephrase that. It is so easy for ME to eat too many meatballs.
This is a basic recipe. Don’t be afraid to add other seasonings to make them to your liking.
1 lbs ground meat (I use bison or lamb, but ground beef would work too)
1 organic egg
1/4 cup millet flour
1 garlic clove, minced
fresh ground pepper
a pinch of sea salt
Place all of your ingredients in a mixing bowl, then mix everything together using your hands. Roll in to 1 inch balls. Saute in a bit of olive oil over medium high heat. They will be fragile, so very carefully, roll them over to brown on all sides. Turn your heat to medium and add about a 1/4 cup of water to the pan. Cover and simmer for a few minutes to let the insides cook. Add more water if needed to let them cook longer.
