The girls are still sleeping (YAY!!), so I thought I would try to sneak in a quick note. Thank you, again, to all my friends and family supporting me in this endeavor. I wouldn’t be able to do it without you. LOVE YOU ALL!
One of the biggest things I had an issue giving up when starting the anti-inflammation diet was my half and half in my coffee. Before the diet, I would wake up feeling like I had been beaten with a bat in the middle of the night or run over by a train if you will. Stiff joints, achy muscles, swollen hands/feet… coffee was (and still is!) my morning sanity. I’m sure many of you arthritis moms (or dads!) out there have a similar routine: wake up (if you’re well enough to even get out of bed… I had a few close calls, but I made it!), change diapers, get bottles, put the children in front of tv to watch cartoons, then COFFEE!!! Sitting with my favorite drink in my favorite chair is just one of my ways with coping with the morning arthritis blues.
I tried using coconut milk (straight out of the can) as my coffee creamer for a while. I’d use agave nectar as my sweetener. I tried using almond milk, rice milk, etc… Nothing did it for me. I was still searching for the perfect cup of dairy free coffee.
One day while in our local health food store I discovered a line of coffee creamers from Turtle Mountain. Their So Delicious creamers are made from coconut milk (with only a hint of coconut flavor). They come in original, hazelnut, and french vanilla flavors – and I LOVE THEM! They are soy and dairy free. The one bummer is that they do have some organic evaporated cane juice in them, but I figure if it’s the only source of cane sugar I get in my day, then oh well.
For all of my followers in the Anchorage area, the So Delicious coffee creamers can only be found at the Natural Pantry.

I've never done a blog before, so navigating the blogger platform has been a learning experience. Rochelle actually sent me a link to your mac n cheese recipe a few days ago. Pimentos and cashews are on my grocery list. I can't wait to try it!
I don't think I realized how restricted your diet is until I started reading your blog. It's amazing all the stuff you create that looks so delicious without all the bad stuff! As for your coffee, you can have honey, right? Do you use agave because it's lower on the glycemic index than honey? I'm just curious because I know some people give me weird looks when I say I like honey in my coffee, but it's a great flavor addition and I bet it would be awesome with that So Delicious vanilla creamer!–Louise
Thanks, Louise. I really appreciate you checking out my blog – it means a lot! I generally use agave because it doesn't have the distinct flavor honey does. I love honey, but I only like it paired with certain things… if that makes sense. I would have never thought to put honey in coffee either. I just might have to try it one of these days!
